Insalata super-energetica

Fennel is widely used in Italian cuisine.

It is known since ancient time for its aromatic and therapeutic properties: it is anti-inflammatory, combats flatulence and prevents nausea, plus it stimulates blood flow in the pelvic area and uterus, and promotes the production of urine.

It also helps the production of milk, and that’s why I am eating a lot of it right now. An infusion made with fennel seeds is effective against colic caused by air and it is often given to babies.

Super-energy salad

2 fennel bulbs

a handful of sesame seeds

a handful of pumpkin seeds

a handful of sunflower seeds

XV olive oil

balsamic vinegar

salt and pepper, to taste

Remove the green stalks and outer parts of the fennel bulbs and reserve them for another recipe. The rest is almost trivial: cut the fennel, sprinkle with the seeds, and season with olive oil, balsamic vinegar, salt and pepper.

So easy, so tasty, so good for your health!
