My favourite salad

This is one of my favourite salads, since I first ate it many years ago in Café Firenze in Abu Dhabi and I often prepare it when I have a picnic or bbq with friends.

Watermelon and feta salad (serves 2):

100 gr. feta cheese

200 gr. watermelon

50 gr. black olives

a bunch of rocket leaves

Well, it is pretty obvious: cut the feta cheese and the watermelon into cubes, pit the olives and cut them, wash the rocket leaves and cut them. Mix everything.

To season the salad there are basically two options: the first one is XV olive oil with salt and balsamic vinegar; while the other one (and my personal choice) is a light vinaigrette made with XV olive oil, lemon juice, salt and a little French mustard.
